Im going to be taking up pld again fairly soon (yeah yeah, shush). I've been asking mego for advice in game, so now it's time to post here. What Im going to do is list each slot, and what gear I have for it, and what gear I plan to get for it all the way up to 75. Any suggestions are appreciated (and perhaps we can do this with other jobs for those of us leveling a 2nd/3rd/etc job and curious as to what people who "main" it consider good).

Im focusing on listing def gear only, not att gear. I do have att gear to swap in from playing drk of course.
Also, as an explanation, Im using the 2 vit = 1 def rule when considering upgrading. I know vit also reduces dmg, but if the def of an item is that much greater, even if the lower level item has def and vit (like say the "german" gear for pld/war), Ill prolly go with the higher def if there is a big diff.

If you want to borrow my Terra when you get back on Pld let me know, the jump from 30 to 35 dmg will probably be pretty helpful at 51. And for rings - Unyielding Ring I would say is a must, Vit of a vit ring with almost the Def of a Phalanx with 3 dex to boot. Gained from Periqia Assault

From what Ive heard, using a staff at that level isnt really worthwhile much to begin with, especially with my low skill. So terra is more towards 70ish prolly.

I'm not Paladin main, but I had been stalking the Paladin boards in 'kazam and KI for months in anticipation of leveling the job, and I've mapped out my own road to leveling, so I'll throw out a thing or two.
Personally, I'd take mercenary earring above any of the three earrings listed, but they would all make nice additions. At 48, drop your Warrior Belt +1 in favor of a Life Belt. The accuracy will do more to help you keep hate (TP, you get spirits within soon) than the VIT will to reduce damage. For boots, I'd go with the +1 Kampf boots until AF. Thankfully, your boots are the first piece of AF available, as it's long time for an upgrade by this point.
Around level 50 to 55-60, a lot of Paladins have claimed that stacking DEF is far more important than stacking VIT, due to the STR/attack ratings of the mobs you fight at these levels. Terra stave and Phalanx rings are usually recommended until you leave the stage, but with the change in shield mechanics, damage reduction from your kite-class shield may equal or exceed this. I haven't seen any newer damage mitigation parses to confirm this, so it's up in the air.
ToAU has quite a number of nice assault pieces for Paladin, I'd pick of a Chivalrous chain for use in conjunction with your Parade gorget, and as Jon said, the Unyielding ring is just sexy. You get VIT and defense on the same ring, plus a complimentary DEX bonus.
Around level 60, damage-dealing jobs begin to grow some balls and a lot of paladins claim they have more difficulty keeping hate than before. High breath mantle is possibly one of the best additions to Paladin's arsenal that they've seen. +48 HP and +4 Enmity goes a long way towards keeping hate, but if you're doing well, Cavalier's mantle (VIT+3, DEF:8?, Evasion -10) is a good substitute until you can wear Knightly mantle.
Weapon choice may be deemed offensive, but it's one of your biggest tools for keeping hate, and many of them grant defensive bonuses. In the 40's, you'll find yourself trading in weapons three or four times. Your AF weapon is great, but you're best off upgrading your sword until you reach TM Espadon/+1/+2. The sword choice is self apparent, just take a look at the auction house.
Gluttony has been debated, but with the changes to shield patch, I'd warrant that it's probably more useful now than it ever was before the patch (VIT bonuses stack cumulatively during shield damage reduction.) Save the Queen would be incredibly useful.. if cover had a one-minute recast. Durandal seems to be a good alternative around that higher level, until you get to your 'endgame' swords.
One last comment, on rings: Jelly ring has been parsed and debated numerous times, in the end, there doesn't seem to be more than a slightly noticeable difference against most mobs. If you have one (and congratulations on your recent aquisition!) then by all means use it, because it's very useful on mobs that hit hard and fast, but I'd stick with VIT rings up to the point where you can use it. Bomb queen ring's 75 HP is a very nice addition, but it does nothing to decrease your party's downtime. +HP (blood-tanking) is mostly used at endgame level where you have a lot of outside support, and you either hit the VIT cap or the mobs simply hit too hard for it to matter. In a normal EXP party, you're better off with anything that lends to the mages (and yourself) wasting less MP, so defensive bonuses trump HP bonuses. HP is a nice third choice after VIT and DEF, however, since it increases your survivability. Another thing to keep in mind is that parade gorget does not take your acessorry slots into consideration when determining the HP to proc, so wearing +HP/MP in these slots will not increase the range of HP for which it will activate. Your AF, on the other hand, will.
